Lentil Taco Meat
“I got this idea from one of my fans and now we make lentil tacos (or burritos, or enchiladas!) at least once a week. Use brown- or the greenish-colored lentils here, not red or yellow,” Nixon suggests.

  • 1 tablespoon chili powder

  • ½ teaspoon paprika
  • ¼ teaspoon garlic powder (granulated)
  • ¼ teaspoon onion powder (granulated)
  • ¼ teaspoon dried oregano or marjoram
  • 1/8 teaspoon cayenne pepper (optional)
  • nondairy milk (optional)
  • salsa (optional)
  1. Pulse warm lentils in a food processor or blender until chopped up or pureed (your choice).

Mushroom-Stuffed Pork Tenderloin

Hello Fit-NOW Friends!

I was in search of healthy meals for the holidays. The Food Network website had this mouth watering recipe to try!

Total Time: 1 hr 10 min
Prep: 25 min
Cook: 45 min
  • Yield: 6 servings
  • Level: Intermediate

  • Ingredients

    • 5 tablespoons extra-virgin olive oil, plus more for brushing
    • 4 slices bacon, chopped
    • 8 ounces cremini mushrooms, thinly sliced
    • Kosher salt and freshly ground pepper
    • 1 clove garlic, finely chopped
    • 1 tablespoon breadcrumbs
    • 1/2 cup chopped fresh parsley
    • 2 pork tenderloins (2 to 2 1/2 pounds total), trimmed
    • 1/2 teaspoon grated lemon zest

    Directions

Heat 2 tablespoons olive oil in a large skillet over medium heat. Add the bacon and cook until crisp, about 8 minutes. Add the mushrooms, 1/2 teaspoon salt, and pepper to taste; cook until the mushrooms are soft, about 4 minutes. Add the garlic and cook 1 minute. Remove from the heat and stir in the breadcrumbs and all but 2 tablespoons parsley. Let cool.

Soak 10 to 12 toothpicks in water to prevent them from burning. Rinse the pork and pat dry. Butterfly the pork: Make a 1-inch-deep incision down the length of each tenderloin; do not cut all the way through. Open the meat like a book so the tenderloins lie flat.

Cover the pork with plastic wrap; pound with the flat side of a meat mallet until about 1/2 inch thick, starting from the middle and working outward. Spread the mushroom mixture over the 2 tenderloins. Starting with a long side, tightly roll up each tenderloin. Secure the seams with the toothpicks.
Preheat a grill to medium high; brush the grates with olive oil. Brush the pork rolls with olive oil and season with salt and pepper. Grill, turning, until a thermometer inserted into the center of the pork registers 140 degrees F, 25 to 30 minutes. Transfer to a cutting board to rest, about 10 minutes.
Mix the remaining 3 tablespoons olive oil and 2 tablespoons parsley, the lemon zest, and salt and pepper to taste in a bowl. Remove the toothpicks and slice the pork rolls. Top with parsley oil.

    Red & White Salad

    Hello Fit-NOW Friends!

Are you cooking for the holidays? Are you planning your menu? Here is a different salad to possibly try in your holiday menu this year. Eating Well shared the following recipe.

Bitter, sweet and peppery flavors marry well in this confetti-like salad of wintery fruit and vegetables.

    Active Time:
    Total Time:

    Ingredients

    • 4 cups thinly sliced hearts of romaine
    • 2 heads Belgian endive, cored and thinly sliced
    • 1 bulb fennel, trimmed, cored, quartered and thinly sliced
    • 1 15-ounce can hearts of palm, drained, halved lengthwise and thinly sliced
    • 1/2 head radicchio, cored, quartered and thinly sliced
    • 1 red apple, cored and cut into matchsticks
    • 1 cup thinly sliced radishes
    • Champagne Vinaigrette, (recipe follows)
    • Freshly ground pepper, to taste

    Preparation

    1. Toss romaine, endive, fennel, hearts of palm, radicchio, apple and radishes together in a large salad bowl. Add vinaigrette and toss to coat. Season with pepper.

    Tips & Notes

    Champagne Vinaigrette

Whirring this champagne vinaigrette in the blender gives it a creamy consistency. If you don't have a blender, just mince the shallots, then whisk the ingredients in a medium bowl.

One of the comments mentioned to cut back on the shallot that it was to strong. I think it will just depend on your taste.

    2/3 cup, for 8 servings
    Active Time:
    Total Time:

    Ingredients

    • 1 shallot, peeled and quartered
    • 1/4 cup champagne vinegar, or white-wine vinegar
    • 1/4 cup extra-virgin olive oil
    • 1 tablespoon Dijon mustard
    • 3/4 teaspoon salt
    • Freshly ground pepper to taste

    Enjoy!

    Tuscan-Style Tuna Salad

    Hello Fit-NOW Friends!

Eating Well website provided this streamlined version of a northern Italian idea is perfect for a summer evening: no-fuss, no-cook and big taste. You can even make it ahead and store it, covered, in the refrigerator for several days. If you do, use it as a wrap filling for the next day's lunch.

    4 servings, 1 cup each
    Active Time:
    Total Time:

    Ingredients

    • 2 6-ounce cans chunk light tuna, drained (see Note)
    • 1 15-ounce can small white beans, such as cannellini or great northern, rinsed (see Ingredient note)
    • 10 cherry tomatoes, quartered
    • 4 scallions, trimmed and sliced
    • 2 tablespoons extra-virgin olive oil
    • 2 tablespoons lemon juice
    • 1/4 teaspoon salt
    • Freshly ground pepper, to taste

    Preparation

    1. Combine tuna, beans, tomatoes, scallions, oil, lemon juice, salt and pepper in a medium bowl. Stir gently. Refrigerate until ready to serve.

    Tips & Notes

    • Make Ahead Tip: Cover and refrigerate for up to 2 days.

    • Ingredient Note: When you use canned beans in a recipe, be sure to rinse them first in a colander under cold running water, as their canning liquid often contains a fair amount of sodium.

    Crab Cake Burgers

    Hello Fit-NOW Friends!

The EatingWell website has a delcious Crab Cake Burger recipe from an older version of the magazine back in 2005, but it still sounds amazing!

These burgers have a true crab flavor that isn't masked by fillers or strong seasoning. Serve on a bun with tartar sauce or with a lemon-juice-dressed salad of greens, sprouts and sliced peaches. This recipe works best with convenient pasteurized crabmeat, usually found in the refrigerated case near the fish counter. If you prefer lump crabmeat, cut it into small, uniform pieces.

    6 servings

    Active Time: 20 minutes
    Total Time: 20 minutes

    Ingredients

    1 pound crabmeat
    1 egg, lightly beaten
1/2 cup panko breadcrumbs, (see Note)
    1/4 cup light mayonnaise
    2 tablespoons minced chives
    1 tablespoon Dijon mustard
    1 tablespoon lemon juice
    1 teaspoon celery seed
    1 teaspoon onion powder
    1/4 teaspoon freshly ground pepper
4 dashes hot sauce, such as
    1 tablespoon extra-virgin olive oil
    2 teaspoons unsalted butter

    Preparation

1.Mix crab, egg, breadcrumbs, mayonnaise, chives, mustard, lemon juice, celery seed, onion powder, pepper and hot sauce in a large bowl. Form into 6 patties.

2.Heat oil and butter in a large nonstick skillet over medium heat until the butter stops foaming. Cook the patties until golden brown, about 4 minutes per side.

    Tips & Notes
Note: Panko breadcrumbs, also known as Japanese breadcrumbs or bread flakes, are coarser in texture than other dried breadcrumbs. They produce a crispy crust and are less likely to become soggy than finely ground breadcrumbs. Look for panko in the Asian food section of large supermarkets and in specialty Asian markets.
